This is a wine from the Vacqueyras vineyards situated at the foot of the Dentelles de Montmirail. Here, the high Garrigues made of worn pebbles associated with the Mediterranean climate work wonders for the wine. Traditional wine-making process using de-stalked grapes, optimal gentle extraction during the fermentation with long maceration of the juice /skins. The exact duration and the extraction method employed are adapted according to the weather/environmental conditions of the year, also to the regular tasting of the must.
